This article is decently written and demonstrates that Pthag is more right than others. I'll say this, to me, the distinguishment has always been ingredients and freshness...this is probably due to me living in the Eastern US for most of my life and the short time that I did live in the Southwest was spent in awe of how fresh and authentic the taquerias were...that's just me though.
I keep forgetting about the cheese part, because I can't eat it in anything like the quantities most people (in this culture at least) do. So I always tell whoever to leave it out.
Cheese - to me - is only ever good in small amounts any way. What I dislike are the beans...oh the unholy beans...No quiero los frijoles!

In Catalonia there are a few recipes of fish with some kind of cheese preparation (dry, sauce, au gratin...), like arròs amb peix i formatge or lluç amb formatge (the European hake is stuffed with cheese, apparently).

So it's right... how odd, it just seems like such a normal combo to me. shellfish and fat. we also dip our seafood in large amounts of garlic and oil and call that an entrée: at least the catalans are sane and do it to fish.
