Foods that aren't claimed to be somehow native to the Americas.

Idk about gourmet, I've honestly never had explicitly high end Mexican. Just side of the road trailers and mama y papa restaurants, but damn if it wasn't good. You might make decent to great Mexican, I dunno; if we're ever in the same area I'd love to find out, either way (I doubt you make TexMex if you care at all about heat and quality of the dish).

You're always welcome. Interstate 81 just N of Maryland.

even i know that this 'heat is the distinguishing feature' thing is nonsense

the presence of cheese [esp. cheeses which are not white] and 'barbeque' ingredients [incl.  beeeeeeeeeeeeeef] is more likely an indicator you are eating texmex, is it not

This article is decently written and demonstrates that Pthag is more right than others. I'll say this, to me, the distinguishment has always been ingredients and freshness...this is probably due to me living in the Eastern US for most of my life and the short time that I did live in the Southwest was spent in awe of how fresh and authentic the taquerias were...that's just me though.

I keep forgetting about the cheese part, because I can't eat it in anything like the quantities most people (in this culture at least) do. So I always tell whoever to leave it out.

Cheese - to me - is only ever good in small amounts any way. What I dislike are the beans...oh the unholy beans...No quiero los frijoles!

Cheese is the LORD's gift to mankind. Cheese on its own, cheese with meat, cheese with pasta, cheese with seafood. they really went wrong with the FSM. I shall make my own sect where his noodly appendage is covered in grated parmigiano reggiano.

Try eating it when your gut turns it into lactic acid. Not fun at all.

Also I'm told by a spanish buddy that outside chile people don't eat cheese with their seafood... is this the case? does seafood with cheese strike you as some sort of odd combo ?

In Catalonia there are a few recipes of fish with some kind of cheese preparation (dry, sauce, au gratin...), like arròs amb peix i formatge or lluç amb formatge (the European hake is stuffed with cheese, apparently).

Yeah, that's super gross. Sounds like something you'd find at Red Lobster.

So it's right... how odd, it just seems like such a normal combo to me. shellfish and fat. we also dip our seafood in large amounts of garlic and oil and call that an entrée: at least the catalans are sane and do it to fish.

you got it wrong hallow. Lactase-persistent master race

And in that spirit I leave you with a sort of cheese-and-crabflesh paste we cook here which is delishus.
